- 1 lb sweet potatoes
- 4 tbsp Arbequina EVOO
- 4 tbsp Maple Bourbon Dark Balsamic Vinegar
- 1 tbsp Cinnamon Pear Dark Balsamic Vinegar

Instructions
- Dice sweet potatoes into small cubes.
- In a pot, boil diced sweet potatoes for 10-15 minutes until they are still somewhat firm. Remove from water and strain.
- In a frying pan, heat Arbequina EVOO and sauté sweet potatoes on high heat until slightly charred.
- Just before removing sweet potatoes from heat, drizzle with Maple Bourbon Dark Balsamic Vinegar.
- Plate sweet potatoes and drizzle again with Cinnamon Pear Dark Balsamic Vinegar.
