In a small bowl (A), mix together the dry ingredients (Lakanto monkfruit sweetener, salt, baking powder, and ground cinnamon). Set aside.
In another large bowl (B), add all of the Butter Infused Olive Oil and Cinnamon Pear Dark Balsamic Vinegar. Mix thoroughly.
To bowl B, add the remaining wet ingredients (Whispering Meadows egg and vanilla extract) and blend thoroughly.
Add the almond flour and bowl A to bowl B and mix well.
Add walnuts, macademic nuts, or raisins at this stage (optional).
Portion out your cookies (appx. 8) onto a cookie sheet*. Bake for 10-12 minutes or until golden.
*Feel free to bake on a tray with parchment paper, foil, or however you would bake cookies.
